At Virginia’s only location of L&L, plate-lunch barbecue like you’d get it in Hawaii

In the way of beach towns everywhere in America, Hampton Roads has long loved the idea of Hawaii. Everybody and their cousin seems to be making something they call tiki. And you could start Virginia’s biggest nursery by planting the floral shirts spotted on Shore Drive in a single evening.

But aside from a profusion of (mostly California-style) poke spots, the food hasn’t necessarily followed. At least, not in a form that Hawaiians would recognize as their own.

So when we reported that L&L Hawaiian Barbecue would be opening an outpost in Chesapeake, the outpouring was immediate — from native Hawaiians now living here, from Navy vets who spent years on the islands eating spam musubi and mac salad, or from tourists with fond memories of a few stolen days.

L&L is the In & Out of the islands — the most popular and prolific blue-collar home to the fast-casual Hawaiian plate lunch. The plate lunch is at its heart a simple thing: Usually, it means any kind of teriyaki, pulled kalua pork or Japanese-style breaded katsu chicken, served up with a scoop apiece of white rice and mac salad.

Founded more than 40 years ago on the islands, the L&L chain has slowly been spreading eastward with its gospel of luau-leafed lau lau and loco moco — not to mention surprisingly good diner-style hamburgers made with the same soy-based barbecue sauce they use on their spam musubi.

The L&L at 717 Eden Way North is not just the first L&L location in Virginia. It’s the only location for 300 miles — and one of only four on the East Coast.

It’s also immediately the best basic Hawaiian-style plate lunch available in Hampton Roads.

L&Ls are a chain, but each location is also scratch cooking, the same way Hardee’s does it with biscuits. And each location is notoriously different.

Chesapeake’s franchise co-owner Lee Ang — who coincidentally shares a name with the "Lee & Lee” who founded L&L — had to build his own supply chain of local pork butt for his kalua pork, and the swai fish he uses for the fried fillets.

But so far, the news in Chesapeake has been very good.

A native Hawaiian acquaintance reported back almost immediately that the Chesapeake L&L had “nailed” the mac salad — soft macaroni steeped in the sweetness of carrots and Hellman’s mayo, with a touch of cider vinegar for balance and a dappling of salt and white pepper. It is what comfort is, light give to the tooth and silky creaminess without cloy.

Beef short ribs aren’t at the level of the galbi at Korean spots like Mona’s in Newport News, but they’re a decent enough rendition. Chicken barbecue, meanwhile, is a deliciously moist and soy-soaked thigh tender enough to yield gently to the side of a fork.

The kalua pork, meanwhile, was so right in its rightness it was almost worth crying over.

L&L’s kalua pork is far from fancy, far from the most acclaimed in Hawaii, and even farther from the traditional leaf-topped, whole-pig pit barbecue once reserved only for Hawaiian royalty.

It is instead a casual drive-in version, a lightly salted local pork butt that’s been cooked and worried over for three hours in a stove-top pot. Its smoke flavor comes from a bottle, not from wood.

And yet, it was the flavor I knew — a flavor I picked up as a child of the West Coast who cooked his first adult meals with a Hawaiian roommate couldn’t eat dinner without sesame-and-seaweed furikake seasoning on the table.

I didn’t know until I ate it at L&L how much I’d missed it. Until then I’d never found that exact taste in Hampton Roads: pork that’s almost too tender, salted but not salty, rich with confit flavor. One taste, and I was almost sappy in my sentimentality. (Come on, Matthew, I said to myself: It’s stove-top pork. Pull yourself together.)

The saimin — Hawaii’s version of ramen, served at L&L with a seafood dashi broth — was far less successful. The Japanese-style noodles came on soft and overcooked, with none of saimin’s trademark chew. One could also quibble about whether the crisp panko breading on the fish fillets — similar to the version used on their chicken — is a bit aggressive for such a mild fish.

But for the most part, L&L delivers on its promise. Hamburgers are low-cost ($3.50-$4) and familiarly diner-style, a grill-charred smashburger patty topped with American cheese and served on a white-bread bun — and should always be ordered as the barbecue version with a lightly tangy soy-based sauce. The grilled chicken sandwich is better than that.

And the seaweed-wrapped spam musubi was also what it was meant to be: a slab of flat-top-seared spiced ham, soaked in teriyaki-style sauce and served on a slab of rice that runs a bit on the thick side.

The only item that isn’t cooked on-site is the lau lau butterfish served on weekends, which arrives frozen from the same Keoki’s brand that sells to Walmart and Costco locations on the islands. The fish, salted and wrapped in multiple layers of taro leaves, was a bit dry to my taste — but Ang says the nostalgic pour in to his restaurant to eat it, often driving from many miles away.

The Angs have also added a few homespun touches to the Chesapeake menu.

The pork lumpia are a nod to the demographics of Virginia Beach and also the Angs’ own Filipino heritage — and they are beautifully savory, crisp and freshly made to order. The Angs also added a ridiculously sweet-tangy Dole Whip dessert that’s a bit like sour-pineapple soft serve, and is best known on the mainland for being offered at Disney World. Though a bit spendy at $3.50, it’s delightful.

For that matter, so is a bright-purple ube cheesecake cupcake procured from local Filipino bakery Sweet Art — so rich it should be shared by two.

That said, order ahead online or expect to wait a bit for your order. On weekends, the wait for food extends is around 15-20 minutes: If it looks like fast food in its styrofoam clamshell, it isn’t necessarily. And on one of three visits, a dish was accidentally dropped from our takeout order, so we had to pick it up later.

But if you’ve spent time on the islands, and you want mac salad that tastes like the mac salad you know, and pork or chicken barbecue that tastes like the stuff from the local drive-in on Kauai, then you will likely weather these occasional hitches. Because this food will be the food you remember, if you remember it from Hawaii.
