IT’S the time of year when the thrill of grilling starts to wane. Perfectly charred steak enhanced with only salt and pepper, which seemed like nirvana in early June, doesn’t necessarily excite in late August.

But there’s a remedy: turn to the cooking of India for a little late-season inspiration.

Of course, it’s about as accurate to speak of “Indian cooking” as it is to talk about “European cuisine.” The cooking of Gujarat, for example, is as different from that of Kerala as French is from Spanish. Even so, there’s one factor that’s pretty much universal among the diverse cuisines of the subcontinent: a remarkable dexterity with spices.

Indian cooks don’t just add spices to food; they consider how each spice will be used and what characteristic of it should be emphasized. Then they treat the spices in ways that will bring out these traits.

It would take more lifetimes than we have between us to master the intricacies of Indian spice cookery, but that’s no reason not to begin. Even the rudiments will create food with vibrant flavors. And, since the distinctive charred, smoky flavor of food cooked over open fire can easily hold its own with spices, there’s no better way to quickly liven up your grilled food.

The first principle of Indian spice cookery (and of spices in general) is that spices are best when bought whole and ground fresh. As soon as spices are ground, the volatile aromatic oils that give them their distinctive aromas and flavors begin to evaporate. So preground spices are less potent and have a much shorter shelf life than whole spices.

Think, for example, of the difference between the intense bite of freshly ground black pepper and the dull echo of the flavor of preground. This is true of all spices. The difference is astounding; for someone tasting for the first time a dish made with freshly ground spices, the flavor can be revelatory. This makes it well worth investing in a spice grinder, or a coffee grinder that you devote only to spices.

But Indian cooks take it to the next level by varying the grind. Some spices are ground fine, so that their flavors blend more seamlessly; others are left rather coarse, so that they add texture and create little explosions of flavor when crunched between the teeth.

When we make a rub for shrimp, for example, we want the flavors of the spices to even out and blend with the mild flavor of the seafood. So we grind the spices fine. When we combine spices with beef, we like to get a good crust on the outside to contrast with the tender interior meat. This heavy char works perfectly with bursts of intense flavor, so we’re more likely to use cracked rather than fine-ground spices.

However they are ground, most spices also meet heat before being added to a dish, a process that both brings up the aromatics and mellows and rounds the flavors. Sometimes spices are toasted dry. This process, which gives them slightly more earthy and smoky flavors, is very straightforward: put the spices in a dry sauté pan over medium-low heat and toast, shaking the pan to create even browning, until they start to darken just a bit and you can smell their characteristic aromas, usually about two minutes.

Another approach is to “bloom” spices by sautéing them in oil. Like roasting, this technique simultaneously intensifies and mellows flavors. But because volatile spices are soluble in oil, this approach has the advantage of dispersing flavor into the oil itself, which helps distribute it evenly. Just add the whole spices to the oil and cook, stirring, until little oil bubbles form around their edges and you can smell the aromas. This approach works particularly well with cinnamon sticks, cumin seeds, mustard seeds and whole chiles.

We have to admit that there are also occasions when we cheat and start with preground spice mixtures. This makes most sense to us when it’s hard to get your hands on the whole spice, as with turmeric, or when you turn to spice combinations like chile powder or curry powder, which are shortcuts to complex flavors. Somewhat paradoxically, in these instances toasting the spices is even more important, because it helps bring back some of the flavors that have been dulled by pregrinding.

You may have to replenish or upgrade your spice collection to follow the lead of India’s cooks. But the reward in flavor excitement is worth it, and summer’s end just might find you doing your best grilling of the year.
